This is the soup for the day after a roast chicken. Any cooked chicken works, white meat or dark, pulled into bite-size shreds. Everything else is three vegetables, garlic and a handful of dried herbs.
Why Chicken Broth
Steadfast Farms' Chicken Broth is made in Bethlehem, Connecticut, from our chicken with onions, leeks, celery, carrots, garlic, parsley, thyme, black peppercorns and bay leaves. That is nearly the same list this soup builds on, which is why a short simmer and a few teaspoons of dried herbs are enough: the broth arrives already tasting of the pot you are making. It is already seasoned with kosher salt, so the recipe adds none.

How to make it
- Prepare the vegetables. Dice the carrots, celery, and onion. Mince the garlic.
- Sauté the vegetables. In a large soup pot, heat the olive oil and melt the butter over medium heat. Add the carrots, celery, and onion. Cook for 8 to 10 minutes, stirring occasionally, until the vegetables begin to soften and the onions become translucent.
- Add the garlic. Stir in the minced garlic and cook for another minute.
- Season the vegetables. Add the dried thyme, parsley, rosemary, and black pepper. Stir well to coat the vegetables and cook for 1 additional minute, allowing the herbs to release their flavor.

- Add the broth and simmer. Pour in the chicken broth and water. Add the bay leaves and bring the soup to a boil. Reduce the heat to low and simmer for 20 to 30 minutes, or until the vegetables are fork-tender.
- Add the chicken. Stir in the shredded chicken and simmer for 5 minutes.
- Finish with dill. Remove the bay leaves and stir in the dried dill. Simmer for another 5 minutes.
- Rest and serve. Remove the pot from the heat and let the soup stand for 10 minutes before serving. Ladle into bowls, garnish with fresh parsley, and enjoy!

From the Steadfast Table
Use cooked chicken within 3 to 4 days of cooking it.
To store the soup, divide it into smaller containers so it cools quickly, and refrigerate it within 2 hours. It keeps 3 to 4 days in the refrigerator or 3 to 4 months in the freezer.
When you reheat it, bring it to a rolling boil, which takes it past 165°F.
