Why Boneless Skinless Chicken Breast?

Steadfast Farms Boneless Skinless Chicken Breast is a great choice for this recipe. Once cooked, the tender meat shreds easily and holds its texture in the creamy dip. Its mild flavor lets the Buffalo sauce and cheeses shine, while adding hearty chicken to every scoop.
Ingredients
- 1 1/2 lb shredded cooked chicken, from 1 package Boneless Skinless Chicken Breast (about 1 3/4 to 2 lb raw)
- 8 oz sour cream
- 8 oz cream cheese, softened
- 8 oz shredded Colby Jack cheese, 2 oz reserved for topping
- 5 oz crumbled Gorgonzola cheese, 2 oz reserved for topping
- 1/2 cup Buffalo sauce (we prefer Frank's RedHot Original, but you can use your favorite hot sauce)
- Tortilla chips, carrot sticks and celery sticks, to serve
How to make it
Cook the chicken
- Place chicken breasts in a 4-quart pot and cover with cold water by approximately 1 inch.
- Bring to a boil over medium-high heat, then immediately reduce to a gentle simmer.
- Cook for approximately 12 to 20 minutes, depending on thickness, until an instant-read thermometer in the thickest part reads 165°F. Go by the temperature, not the minutes.
- Remove from the water, rest for 5 minutes, then shred with two forks.
Prepare the dip
- Add shredded chicken, sour cream, cream cheese, Buffalo sauce, 3 oz of Gorgonzola and 6 oz of shredded cheese to the slow cooker and stir together.
- Heat on the HIGH setting for 60 to 80 minutes, stirring every 30 minutes to ensure even heating.
- Once the dip is hot throughout, sprinkle the remaining shredded cheese and Gorgonzola on top and cover until the cheese on top is fully melted.
Serve warm with tortilla chips, carrot sticks, and celery sticks.

Tips & Variations
- Adjust the heat: for a milder dip, start with less Buffalo sauce and add more to taste.
- Serving suggestions: tortilla chips, celery, carrots or toasted bread.
- Leftovers: refrigerate within 2 hours and use within 3 to 4 days, reheating until hot throughout.
